Hungarian Spaetzles

Ingredients

1 cup flour
1 egg
1 egg yolk
5 1/2 tablespoons milk
3/4 teaspoon salt
dash nutmeg
1 tablespoon parsley minced
2 tablespoons butter
1/4 cup bread crumbs soft

Directions:

Mix the first seven ingredients and place in a coarse colander over a large kettle of rapidly boiling, salted water. Press through the colander with a wooden spoon or glass. Cook for about 5 minutes after all the mixture has been pressed through the colander. Rinse under cold water. Drain.

Melt butter. Add soft bread crumbs and brown lightly. Stir into the spaetzles and brown lightly over low heat for about 10 minutes.

Note: Spaetzles may be purchased in the gourmet section of your supermarket.
