Preheat oven to 400°.
In a small saucepan over medium heat, bring water, onion and celery to a boil reduce heat to low, cover and simmer for 4 minutes or until vegetables are almost tender. Drain well.
Meanwhile, slice each roll crosswise. With a fork, remove inside crumbs leaving a 1/4 -inch shell. Place crumbs in a medium bowl. Add turkey, poultry seasoning, salt, pepper and drained vegetables. Toss with a fork to mix well. Spoon one-third of the mixture into bottom of each roll replace tops. Wrap each in foil.
Bake for 15 minutes or until heated through. Unwrap sandwiches and serve with gravy.
