Ingredients

2 onions medium, chopped
1/2 bay leaf
1 1/2 cups water
1 cup half and half
3 tablespoons margarine
3 tablespoons flour
1/2 teaspoon salt
Few drops of hot pepper sauce

In a covered medium saucepan, boil chopped onions and bay leaf in 1 1/2 cups water until onions are very tender, about 20 minutes. Remove bay leaf. Purée onions and cooking water in blender or food processor, or press through a sieve add enough half-and-half to make 2 cups puréed mixture. Heat margarine in saucepan add flour and stir for 3 minutes. Add onion purée, salt, and hot pepper sauce stir well. Bring to boil and simmer until thick, about 10 minutes. Adjust seasoning.

Note: This is a good sauce for meatballs. Also can be combined with leftover cubed roast beef or served over baked potatoes.
