Cranberry Pears

Ingredients

6 pears ripe Bosc (or other small variety) with stems
3 cups cranberry juice
1 cinnamon 2-inch
2 cloves whole
2 tablespoons honey
1 cardamon pod or 1/4 teaspoon ground cardamom

Directions:

Pare pears leaving stems intact. Place cranberry juice in a 3-quart kettle with cinnamon stick, cloves, honey, and cardamom. Bring to boil and simmer 3 to 4 minutes. Add pears and gently simmer about 20 to 30 minutes, until tender. Turn pears in syrup occasionally to color evenly. Remove pears from syrup and let cool, blossom side down in serving dish. Bring juice to boil, uncovered. Simmer reduce syrup to approximately 3/4 cup remove spices. Spoon syrup over pears and refrigerate until well-chilled. Before serving baste pears with syrup.
