Chicken-Pasta Salad with Melon

Ingredients

1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons honey
1 teaspoon lemon peel grated
1 1/2 tablespoons lemon juice
1 teaspoon ginger ground
1/2 teaspoon salt
1 (8-ounce) package rotini (corkscrew macaroni), cooked, drained and cooled
2 cups chicken cubed cooked
2 cups cantaloupes or honeydew balls or a combination (about 1 small melon)
almonds Toasted slivered
watercress

Directions:

In a large bowl, whisk mayonnaise, sour cream, honey, lemon rind and juice, ginger and salt until blended. Gently stir in rotini, chicken and melon balls until well coated. Serve immediately or cover and chill for 2 hours.

To serve, garnish with almonds and watercress.
