Corn Salsa


Serves: 4

Ingredients

16 ounces Frozen corn (thawed)
15 ounces black beans , precooked/cooked (rinsed)
1/3 cup green onion
1/3 cup green pepper
1/3 cup red bell pepper
1 jalapeƱo pepper
4 ounces green chilies
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

1. Wash hands
2. Chop green onions and place in large bowl. Dice green, red and jalapeno peppers and place in bowl.
3. Rinse black beans well, thaw corn by placing in a strainer and running warm water over it
4. Add ingredients to pepper/ onion mixture. Combine remaining ingredients in a separate bowl and stir well. Pour over other ingredients, cover and chill. Serve with tortilla chips or alone.
