After School Snack Mix

Ingredients

1/2 cup popcorn
1 cup chopped nuts
7 ounces mixed dried fruit
1/2 cup dried cranberries
1/2 cup butter
1 cup granulated sugar
1 teaspoon grated lime rind
1 teaspoon grated orange rind
1/2 teaspoon ground ginger

Directions:

1. Pop popcorn.
2. Preheat oven to 300 degrees F. Remove all unpopped kernels from popped popcorn. In a large roasting pan combine the popcorn, nuts, fruit bits, and cranberries set aside.
3. In a small saucepan combine butter, sugar, lime, orange, and ginger. Cook and stir over medium heat until butter is melted and mixture is nearly smooth (sugar will not be completely dissolved). Pour mixture over popcorn mixture stir gently to coat.
4. Bake for 45 minutes, stirring every 15 minutes. Remove from oven. Spread mixture on a large sheet of foil to cool. Store in an airtight container up to 1 week.
