Timber Cove Inn's Homefries

Ingredients

20 leftover baked potatoes quartered and sliced 1/4 inch thick
1 1/2 cups onions chopped
2 1/2 cups celery chopped
1 bunch green onion chopped whites and greens
1/2 teaspoon seasoned salt
1/4 teaspoon pepper to taste
1/4 cup butter (1/2 cube)
1/4 cup vegetable oil

Directions:

In a warmed 16” or larger Dutch oven, melt butter in vegetable oil. Add remaining ingredients and fry until browned and warmed through. Serve with bacon and eggs or an omelet. Serve with anything that sounds god for breakfast. Try them for dinner.
