Honey and Blue Cheese Fondue

Ingredients

1/2 cup heavy cream
1 teaspoon cornstarch
1 teaspoon fresh lemon juice
2 cups (about 8-ounces) blue or domestic gorgonzola cheese, crumbled
3 tablespoons honey
2 tablespoons walnuts, chopped and toasted

Directions:

In an 8-inch Dutch oven, heat cream and cornstarch over medium heat, about 9 coals under the oven add lemon juice and stir until mixture thickens. Add cheese slowly, one spoonful at a time, being sure all the cheese is melted before adding more cheese. When all the cheese has been added and is completely melted, stir in the honey. Serve immediately with 4 to 6 hot briquette under the Dutch oven to keep fondue warm.

Serve with fresh or dried figs, dates, apricots, and or, apples or other dried or fresh fruits.
