Ceviche Sabroso

Ingredients

2 pounds fresh sole filets or halibut (not frozen, very important)
1 cup lemon juice
2 tomatoes, peeled, seeded, and chopped
1 large red onion, chopped
1/2 cup extra virgin olive oil (EVOO)
1/2 cup fresh cilantro, chopped
2 medium avocados, chopped
salt to taste
1 yellow banana peppers, seeded and chopped
lemon wedges for garnish

Directions:

Combine fish & lemon juice in med bowl, chill in refrigerator, stirring often for 1 hour. Drain in colander. Combine with remaining ingredients in a medium bowl, season with salt and top with chopped pepper. Garnish with lemon wedges in bowl or individual serving dishes.
