Wini’s Carrot Cake

Ingredients

2 cups sugar
4 eggs
1 1/2 cups oil
3 cups all-purpose flour
2 teaspoons baking soda
3 cups grated carrots
1 cup broken pecans
1 teaspoon lemon flavoring
1 teaspoon coconut flavoring
Curacao or Triple Sec Liqueur or 2 cups sugar, 1 1/2 cups fresh orange juice and 2 tablespoons grated orange rind

Directions:

Blend sugar, eggs, and oil. Add flour and baking soda. Mix thoroughly. Fold in carrots, pecans, and lemon and coconut flavorings. Pour into greased and floured Bundt pan. Bake for 1 1/2 hours at 300°. As soon as cake is removed from oven, pour Curacao or Triple Sec, any amount desired, over warm cake. Or, mix together 2 cups sugar, orange juice and orange rind, and brush over all sides of warm cake. Let cool completely in pan.
