Shrimp Quesadillas

4 (16- to 20-count) shrimp, peeled and deveined
4 tablespoons butter, divided
1 green chili, roasted, peeled, seeded and diced
1 tablespoon cilantro
1 teaspoon Southwestern Spice
1 (10-inch) flour tortilla
3 ounces Jack and Cheddar cheese, shredded and mixed together
2 ounces salsa
Southwestern Spice:
1/4 cup chili powder
4 teaspoons ground cumin
1/2 tablespoon ground oregano
1 teaspoon ground basil


Cook shrimp in 2 tablespoons butter with green chile, cilantro, and Southwestern Spice. When cooked, dice shrimp. Heat remaining 2 tablespoons of butter in large frying pan. Add flour tortilla. Sprinkle cheese and shrimp over half of tortilla. Fold over and turn. Cook until both sides are golden brown. Cut into 4 pieces. Serve with salsa and garnish with parsley.

Southwestern Spice:
Combine in small bowl and stir well.
