Lime Marinated Grilled Salmon

Ingredients

2 pounds salmon fillets, cut in 4- to 5-ounce portions
salt and pepper to taste

Lime Marinade:
1/3 cup freshly squeezed lime juice
2 cups coarsely chopped onions
1 1/2 teaspoons coarsely chopped garlic
2 large jalapeño peppers, minced
1 bunch cilantro, coarsely chopped
1 tablespoon honey
1 teaspoon salt

Directions:

Pour half the marinade over the bottom of a glass or stainless steel baking dish. Place the fillets on the marinade and pour the remaining marinade to cover the fillets. Marinate for at least one hour at room temperature or refrigerate overnight.

Wipe the marinade from the salmon, sprinkle the fish with salt and pepper to taste, and grill the salmon to desired doneness.

Lime Marinade:
Combine marinade ingredients in the work bowl of a food processor and pulse for 30 seconds. Taste and adjust seasoning.
