Shrimp Creole

1/3 cup shortening
1/4 cup flour
1 cup hot water
1 (8-ounce) can tomato sauce
1 pound medium shrimp, cleaned and deveined
1/2 cup chopped green onions and tops
4 cloves garlic, pressed
1/2 cup chopped fresh parsley
1/4 cup chopped green bell pepper
1 1/2 teaspoons salt
2 whole bay leaves
1/2 teaspoon crushed thyme
1 lemon juice slice
cayenne pepper
2 - 3 cups cooked rice (prepared according to package directions)


In a large skillet, melt shortening. Blend in flour, stirring constantly until mixture is brown (5–10 minutes). Add water and cook until thick, stirring constantly.

Add tomato sauce and mix thoroughly.

Add remaining ingredients, using cayenne pepper to personal taste. Serve over rice.
