Crabmeat à la Lulu

1/4 cup butter (1/2 stick)
1 cup thinly sliced fresh mushrooms
1 cup milk
1 egg yolk
2 tablespoons lemon juice
1 1/2 tablespoons flour
1 tablespoon finely chopped green onions
1 teaspoon parsley flakes
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon Tabasco
6 ounces cooked crabmeat, if frozen, thaw
1/2 cup grated Swiss cheese


Preheat oven at 350°.

In a small skillet, melt the butter and cook the mushrooms for 10 minutes. Remove from heat.

In a blender, combine the milk, egg yolk, lemon juice, flour, onion, parsley flakes, salt, cayenne, and Tabasco, and blend briefly.

Pour blender mixture into a bowl; add mushrooms, butter, crabmeat, and cheese. Mix well.

Pour into baking dish and bake at 350° for 30 minutes.

Serve over cooked rice or noodles.
