Sautéed Duck Breasts with Roasted Apples on Pasta

Ingredients

4 boneless, skinless duck breasts
salt and pepper to taste
2 tablespoons clarified butter
2 tablespoons butter
1 pound Granny Smith apple, skinned, thickly sliced
1/4 cup chopped shallot
2 teaspoons chopped garlic
1/4 cup apple jack brandy
2 cups heavy cream
additional salt and pepper, if desired
cooked and pasta of your choice
1/2 cup Parmesan cheese

Directions:

Place duck breasts between plastic wrap and pound out to even thickness. Salt and pepper breasts. In saucepan, sauté breasts in 2 tablespoons clarified butter for 2–3 minutes on each side, or to desired doneness; remove from pan and hold in a warm oven. In same saucepan, add 2 tablespoons butter, apples, shallots, and garlic, and sauté for 2 minutes. Deglaze the pan with apple jack; add cream, bring to a simmer, then adjust flavor with salt and pepper. Toss with pasta. Slice duck breasts and place on pasta; garnish with Parmesan cheese.
