Potato Cake

Ingredients

2/3 cup butter or shortening
2 cups flour
1/2 cup milk
2 teaspoons baking powder
1/4 - 1 teaspoon ground cloves
1/2 - 1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup cocoa (or 2 squares chocolate, melted)
2 cups sugar
1 cup hot mashed potatoes
4 eggs (beat yolks and whites separately, add whites last)
1/4 - 1 teaspoon nutmeg
1 teaspoon vanilla extract
1 cup chopped nuts

Directions:

Combine all ingredients; mix well and bake in greased 9x13-inch cake pan at 375° for 40 minutes.


Fun Fact: The Idaho potato, also called the Russet Burbank potato, was first developed in 1871 by Luther Burbank, an American botanist, horticulturist, and a pioneer in agricultural science. Over 30 varieties of potato are grown in the state of Idaho, but the Russet Burbank is by far the most produced potato crop in the state.
