Papa’s Favorite Trout


Serves: 7

Ingredients

1 dozen (6-to 8-inch) little brookies, filleted, but leave the blood line along backbone
salt and pepper
1 stick butter
juice of 2 lemon

Directions:

Salt and pepper trout inside and out. Melt butter in a large skillet until it froths. Add trout and brown on both sides. Add lemon juice prior to turning trout over with spatula. Baste continuously until butter and trout are browned. Eat right away!
