Ingredients

1/2 tablespoon olive oil
zest of 1 orange, finely grated
1/4 cup orange juice, freshly squeezed
2 teaspoons garlic, minced
2 teaspoons dried tarragon
salt to taste
coarsely ground black pepper to taste
4 salmon steaks
2 teaspoons freshly snipped chives

Directions:

Combine olive oil, orange zest, orange juice, garlic, tarragon, salt and pepper in medium mixing bowl to make marinade. Place salmon steaks in oven-proof dish. Pour marinade over steaks. Marinate for at least one hour at room temperature (or let marinate in refrigerator overnight). Preheat grill or oven to 450°.

Place steaks directly on the grill; spoon some of the marinade over steaks. If preparing in the oven, fish may be baked in marinade. Bake for 7–8 minutes, turning after 4 minutes or until salmon is just cooked through. Fish should flake easily when tested with a fork. Place on serving platter and sprinkle with chives.
