"Eat Your Carrots" Soup

Ingredients

1 tablespoon margarine
1 large onion, chopped
2 stalks celery, chopped
2 pounds carrots, chopped
6 cups chicken broth
1/2 teaspoon salt
ground pepper to taste
Tabasco to taste
1/4 cup fresh dill ; reserve a few sprigs for garnish

Directions:

In stock pot, melt margarine. Lightly sauté onions and celery. Add carrots, broth, salt, pepper, Tabasco, and dill. Boil 40 minutes. Purée in food processor. Serve immediately. Garnish with fresh dill sprigs. Enjoy!
