Table Talk: Foil Packets

A long time camping tradition in our family are foil packet dinners. Typically this involves a meat, with vegetables, and light seasoning. Sometimes those vegetables are canned, other times fresh, and sometimes it's even a mixture. Camping food is usually easy, but filling food in our family and foil packet dinners are very easy! The ingredients are sealed together in a well wrapped foil packet and then cooked over coals. A typical pack will take about 25 minutes, but each pack will vary depending on contents, so always check meats with a meat thermometer.

Most of the foil packets that I have had, both in and outside my family involve ground beef in a patty shape, as well as cubed or sliced potato, corn and carrots or green beans with optional onion, spiced with a bit of catsup (prior to cooking or after cooking) and salt and pepper. Though these are very tasty, easy and really filling, sometimes you want to mix it up a bit.

Here are some ideas to shake up your foil packet camp cooking. These ideas can always be changed and ingredients substituted. Feel free to make these ideas your own!

Hawaiian Style Chicken
Chicken breast, drained pineapple rings, cubed sweet potato, optional seasonings, honey barbecue sauce. After cooking sweeten it up with brown sugar.

Hawaiian Style Ham
Ham steak, drained pineapple rings, cubed sweet potato. After cooking sweeten it up with brown sugar.

Breakfast Packets
Frozen shredded hashbrown, beaten eggs, sausage links or patties. Crimp edges of bottom of packet, spray with cooking spray and arrange frozen hashbrown in a nest like shape with an indentation in the middle, add beaten eggs to the center and add sausage on top. The eggs with leak out, and cook up around the rest of the foods, but its best to try to keep it from leaking as much as possible. Salt and pepper as desired.

Creamy Beef Packets
Add cream of mushroom to a packet with a ground beef patty and mixed vegetables.

Creamy Chicken Packet
Add cream of chicken soup to chicken breast with vegetables.

Creamy Garlic Chicken packet
Add cream of chicken soup with a chicken breast and mixed vegetable packet along with a little Italian seasoning.

Creamy Ranch Chicken packet
Add cream of chicken soup with a chicken breast and mixed vegetable packet along with a little powdered ranch seasoning.

Chicken and Rice Casserole with Broccoli
Mix Instant Rice with cream of chicken soup, and water (enough to make it soupy) add cubed chicken breast and frozen broccoli. Top with cheddar cheese if desired.

Apricot Pork Chops
Add apricot preserves to thawed pork chops, add vegetable as desired.

Fish Packets
Combine fish with lemon slices, and seasonings as desired.

For a tasty side dish try asparagus, wrapped in foil with a bit of water and parmesan cheese.
