Black Bottom Cupcakes

Ingredients

2 (8-ounce) packages cream cheese, softened
2 eggs, beaten
2 2/3 cups sugar, divided
1 1/4 teaspoons salt, divided
1 1/2 cups semi-sweet chocolate chips
3 cups all-purpose flour
2 teaspoons baking soda
1/2 cup baking cocoa
2 cups water
2/3 cup oil
2 tablespoons white vinegar
2 teaspoons vanilla extract

Buttercream Frosting:
1 cup butter, softened
6 tablespoons milk
6 cups powdered sugar, divided
2 teaspoons vanilla extract

Directions:

Combine cream cheese, eggs, 2/3 cup sugar, 1/4 teaspoon salt and chocolate chips; mix well. In a separate bowl, combine remaining ingredients; beat well. Fill paper-lined muffin cups 2/3 full; top each with a heaping teaspoon of cheese mixture. Bake at 350 degrees for 25 to 30 minutes. Let cool; frost.

Buttercream Frosting:
Blend butter, milk and 2 cups sugar well; add remaining sugar and vanilla. Beat with an electric mixer on medium-high until fluffy.
