6 medium ears sweet corn, husked
1/4 cup olive oil
3 tablespoons lime juice
1/2 tablespoon grated limes zest
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups cherry tomatoes, halved
1 cup chopped sweet red peppers
1/2 cup chopped cucumbers
1/2 cup fresh cilantro leaves, chopped
1/4 cup chopped red onions
1/4 cup chopped green onions
1/4 cup Cotija cheese
1 medium ripe avocado, peeled, chopped
Directions:
Preheat grill to 350°. Grill corn until lightly charred on all sides, about 20 minutes. Let cool. Use a sharp knife to cut kernels off the cob; discard cob.
In a large bowl, whisk together oil, lime juice, lime zest, salt and pepper. Stir in corn, tomatoes, red pepper, cucumber, cilantro, red onion, green onion and cheese. Cover; refrigerate until ready to serve. Just before serving, fold in avocado.
