1 1/2 pounds fresh green beans, trimmed
3 tablespoons olive oil, divided
1/4 cup Italian-style panko bread crumbs
3 garlic cloves, minced
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/4 cup grated Parmesan cheese
1 to 2 tablespoons minced fresh parsley
Directions:
Fill the bottom of a large saucepan or Dutch oven with 1 inch of water. Place a steamer basket or tray in the pan and add the green beans to the steamer. Bring the water to a boil, cover the pan and steam the beans for seven to eight minutes. The beans should be crisp-tender when done.
While the beans are steaming, add some olive oil to a large skillet. Over medium heat, stir together the bread crumbs, garlic and some salt and pepper. Stir the mixture constantly and cook for one to two minutes, until the bread crumbs have browned. Transfer the bread crumbs to a plate and sprinkle the Parmesan all over the bread crumbs.
Add more olive oil to the skillet and add the green beans. Cook them for two to three minutes, until the beans look slightly charred. Add a little more salt and pepper and then top the green beans with the Parmesan bread crumb mixture. Sprinkle the top of the bread crumbs with minced parsley.
