Some Delicious Things You Can Make With Blueberry Chex!


My sweet mom gave us a bunch of cereal recently. She was rotating through storage and asked if I’d want some cereal- which has been a breakfast staple for us lately! There were some fun varieties in there, and one was Blueberry Chex.

I had never tried Blueberry Chex before, but I can definitely say it’s a new favorite! I’ll be honest- with milk, as a typical bowl of cereal, it’s just ok. But by itself, if you just grab a handful, the blueberry flavor really comes out and it’s delicious! I’m kind of a sucker for blueberry flavors, and this hit the spot!

As I was munching on a handful, I couldn’t help but start thinking about all the delicious things you could do with a box of Blueberry Chex!

  • Add texture to cakes or decorate a cake. I love making layer cakes that have textured fillings, and this Blueberry Chex would definitely fit the bill! I’m thinking a lemon cake with a white chocolate buttercream with Blueberry Chex crumble in between layers sounds perfect!
  • Create a fruity version of Rice Krispie treats by using Blueberry Chex and marshmallow! You could even mix it with Honey Nut Cheerios or Golden Grahams to add more dimension to the flavors!
  • Crumble the Chex, mix with butter and sprinkle on top of your favorite blueberry muffins! (Or really any muffin for that matter).
  • Add texture to lemon pudding! Blueberry and lemon are a match made in heaven! You could make a lemon trifle and use Blueberry Chex to give it some color, texture and delicious flavor!
  • Make your own snack mix. Combine with yogurt covered pretzels, chocolate chips, chocolate covered blueberries, cashews, almonds, pretzels, etc. to create your own tasty mixture!
  • Use it as granola in your favorite yogurt flavor.
  • Sprinkle on top of ice cream!
  • Blueberries and Cream Muddy Buddies. I’ve seen so many variations of muddy buddies aka Puppy Chow!). A blueberry one sounds divine! Just use white chocolate instead of milk! Just melt some white chocolate, stir in the Chex, pour it in a bag, and add some powdered sugar and shake it ‘til it's covered. Toss in some dried blueberries for good measure. Easiest and most delicious snack ever!
  • Blueberry-Lemon Muddy Buddies. This recipe is just on the back of the box, but it’s a good one!

Blueberry-Lemon Muddy Buddies™

Give your Muddy Buddies™ a makeover this spring with the fresh flavors of blueberry and lemon. This Chex Mix recipe is mixed with vanilla chips, then topped with powdered sugar for a simple, sweet treat you can’t resist.

Ingredients:
1 box Chex™ blueberry flavored cereal
1 1/4 cups white vanilla baking chips
1/4 cup butter or margarine (Omit for crispier Muddy Buddies™)
4 teaspoons grated lemon peels
2 tablespoons fresh lemon juice
2 cups powered sugar


Directions:
In large bowl, place cereal.

In small microwavable bowl, microwave baking chips, butter, lemon peel and lemon juice uncovered on High 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Pour lemon mixture over cereal; stir until evenly coated.

Pour into 2-gallon resealable food-storage plastic bag. Add powdered sugar. Seal bag; gently shake until well coated. Spread evenly on parchment paper or waxed paper. Cool completely, about 30 minutes. Store in airtight container.
