Goodbye, Utah. Hello, North Carolina!


So my family has some changes on the horizon- we are moving to North Carolina!

We currently live in Santaquin, Utah, and so this move will literally take us across the country, away from family and friends. On paper, it doesn’t make sense. Why would we make this big move when everything logical seems to be telling us not to?

Because- it’s the right thing. My husband and I are members of the Church of Jesus Christ of Latter-Day Saints, and we believe that our Heavenly Father loves us, and speaks to us. At the end of January, my husband had a conversation with his dad in which North Carolina was mentioned. My husband is always joking about moving somewhere else, and so after this conversation he joked with me about moving to North Carolina. I told him no way- that’s clear across the country!

But then I COULD NOT get North Carolina out of my mind. I opened my scriptures and randomly came across a page that talks about going where the Lord wants us to go, even when it can be scary. My husband and I prayed and fasted (going without food and water) about our decision, and we know without a doubt that it is the right thing for our family.

Change is so fun- and so scary! But I really am excited for this adventure with my little family. I’m excited to see what growth we will go through and all that we will learn! I know there will be plenty of hard parts. But I also know that our Heavenly Father will help us through those hard times, and that this will be an adventure of a lifetime!

But there’s definitely things about Utah I will miss. And the food is definitely a part of that!

I’m going to miss visiting the Red Barn for their apple cider slushies with caramel ice cream! Their ice cream is some of the best around, and their fresh produce is delicious and inexpensive.

I’m going to miss JCW’s. Their burgers are some of my favorite! And they have the best onion rings around, hands down.

Maraca’s in Santaquin is a local favorite! My husband and I love their nachos and chimichangas. We will miss the friendly atmosphere and salsa as well!

I’m going to miss Roy’s Pizza in Ephraim. We have so many good memories with this little hole-in-the wall pizza place. We have made a day trip often just to enjoy some good pizza, a scenic drive, and a fun candy shop to top it all off!

Costa Vida and Cafe Rio. These are pretty much staples if you live in Utah, and oh how I will miss my sweet pork burritos!

With all these things I know I will miss, I’m also excited for all the new favorites I know I will find! Our new favorite pizza place, our new favorite establishment to visit for date night, our new favorite ice cream shop. Utah has so many wonderful things- but I know that North Carolina will too!

With that said, I’d love to hear from any of you who live in North Carolina, or have visited! What are the best food places that I need to make sure we visit? I’d love to hear all about them!
