Your New Favorite Recipe


My husband and I have been meeting with a nutritionist to help get our health back on track. I lost a ton of weight a few years ago, but 2 pregnancies since then have taken their toll on my body and I need to get back on track!

My sister has been meeting with this same nutritionist, and told me about a meal they made that she and her husband loved. She told us we should ask our nutritionist about this particular meal, because it was definitely one we needed to try.

Well, here we are 3 weeks later and this is pretty much what my husband and I have had for lunch everyday. It’s SO GOOD. I love the mix of flavors. And I love what an easy lunch it is! I can triple the recipe easily, make it all in about 20 minutes, and then we can just heat it up in the microwave for the rest of the week for the easiest, tastiest lunch ever! We’ve been spending the past couple weeks packing and cleaning our house like crazy in preparation for showings, and this meal has been a life-saver!

My father-in-law also loves this stuff! He’s not a fan of spice, but once you leave out the red pepper flakes, you don’t have to worry about that, so it’s just the delicious flavor left! It’s easily adaptable for all levels of spice-lovers.

This recipe is so versatile as well. If you don’t love beef, or want a leaner option, chicken would be fantastic! Pork or shrimp would be super tasty too. And you could double the sauce and add a ton of veggies to create your own personalized stir-fry to create a healthy, filling, and delicious dinner that would compete with any takeout!

Korean Ground Beef and Rice Bowls

Korean Ground Beef and Rice Bowls are so incredibly easy to make and will become a family favorite! This makes the perfect weeknight meal.

Calories per serving: 640

Ingredients:
1 pound lean ground beef 90% lean
3 garlic cloves minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2 cups hot cooked white or brown rice
sliced green onions and sesame seeds for garnish


Directions:
In a large skillet cook the ground beef and garlic breaking it into crumbles over medium heat until no longer pink.

In a small bowl whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper. Pour over the ground beef and let simmer for another minute or two.

Serve over hot rice and garnish with green onions and sesame seeds.
