Carolina-Style Barbecue Chicken for the Win!

It has been kind of fun to realize that of all the different sauces I have tried at my favorite BBQ restaurants out there, I always gravitate towards the “yellow” mustardy one if they’ve got it, which I have now come to know is the “Carolina-style” BBQ sauce. 


There are so many different barbeque sauces out there--and there is no better place to come to know this and try out different ones to see which are your favorites, than visiting a barbeque restaurant. You can slather your brisket or pulled pork with spicy, regular, Carolina, or maybe even “Alabama white sauce”. This is known as “white barbeque sauce” and gets its dominant color from mayo--it also contains vinegar, brown sugar, mustard and horseradish. I have actually never tried this white barbeque sauce but it sounds so yummy with that touch of spice from the horseradish so I can’t wait to try this one. It is next on my list! 


For now, I couldn’t wait to get my hands on a good mustard-based Carolina BBQ sauce and air fry some chicken thighs. I love how crispy chicken thighs get, especially in the air fryer, and I knew this recipe for grilled Carolina bbq chicken thighs from Food Network was the ticket!

Even though the recipe has directions for grilling these on an outdoor gas grill, I will include some instructions for making them in the air fryer since it is still a little early for most people to be grilling outside. I made these in the air fryer and they turned out so crispy and delicious.


I made these with my new favorite Instant Pot “baked beans”, and perfect potato salad with some potato chips on the side. It doesn’t get better than this! Try out this recipe for Carolina BBQ chicken thighs and let me know if you love the sauce as much as I do. 

Carolina-Style Barbecue Chicken

The hallmark of Carolina BBQ is a tangy sauce with a vinegar base and just a little spice, but no tomato product. While Carolina BBQ usually features pork, this recipe shows that the flavors work just as well on chicken. A little melted butter in the sauce helps balance the sharpness of the vinegar and mustard, and adds just enough thickness to cling to the meat. Ingredients:
1/2 cup yellow mustard
1/4 cup apple cider vinegar
1/4 cup packed light brown sugar
1 1/2 tablespoons mustard powder
2 teaspoons hot sauce
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
8 skin-on, bone-in chicken thighs (2 to 2 1/4 pounds)
vegetable oil, for brushing
1 large tomato, sliced
Prepared macaroni salad, for serving (optional)


Directions:
Preheat a grill to medium. Whisk the yellow mustard, vinegar, brown sugar, mustard powder, hot sauce, Worcestershire sauce, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the butter.

Season the chicken with salt and pepper, then toss with about one-third of the mustard sauce in a large bowl until coated. Let sit at room temperature, 10 minutes.

Brush the grill grates generously with vegetable oil. Put about 1/4 cup of the remaining mustard sauce in a small bowl for basting and reserve the rest for topping. Grill the chicken, covered, basting occasionally with the sauce, until well marked and a thermometer inserted into the thickest part registers 170 degrees F, 10 to 12 minutes per side.

Serve the chicken with the reserved mustard sauce, sliced tomato and macaroni salad, if desired.
