Creative Ways To Use Up Extra/Leftover Brownies

I know. You probably read the title and thought- when does that ever happen? Brownies are one of those things that very rarely leaves leftovers. And it’s usually a fluke if you end up with extra!

But… things happen.

Last year I was baking a brownie cake for my brother-in-law and the recipe I used completely flopped! It tasted delicious, but sunk like crazy in the middle and I needed to re-do it. Which meant I had a lot of leftover brownies to work with. Not that that’s a bad thing, but it does make you want to start thinking out of the box a little!

You can obviously just always eat the brownies. But we like to get creative sometimes too, and brownies really can be a delicious addition to many things! Why not give one or two of these a try?

  • Crumble them on top of a bowl of ice cream.
  • Mix them into a milkshake for a different texture!
  • Mix them with marshmallow creme and serve between two chocolate chip cookies- the ultimate indulgence! You could also try with homemade Oreo cookies or sugar cookies!
  • Chop them up and throw them into your favorite cookie recipe- forget the sandwiches and just throw them in the batter!
  • Sprinkle on top of cheesecake- now that’s a decadent dessert!
  • Crumble on top of yogurt- it’s like granola! Only less crunchy and more chocolatey….
  • Mix with vanilla ice cream and make an ice cream cake! Chocolate cake with chocolate ice cream, caramel ice cream with chocolate cake, vanilla with strawberry cake- all of these could definitely pair well with some brownie chunks!
  • Mix them into rice krispies for some added chocolatey sweetness!
  • Make a layer cake and crumble the brownies on top of your buttercream layers for a hidden, delicious surprise! I love adding extra flavors and texture to my layered cakes and brownies would be perfect!
  • Make cake pops- but with brownies! Add a little buttercream or cream cheese, roll them into balls and dip into melted chocolate. These would be so addicting!!
  • Brownie bread pudding- use your favorite bread pudding recipe, but use brownies instead of the bread for a truly unique and rich dessert!
  • Put in a bowl and pour a little milk on top- like cocoa puffs! But better!!
  • Give them away! When in doubt, give goodies away. There’s always someone who needs a friend, a listening ear, or just a small gesture of a home-cooked brownie showing up on their doorstep.
Make someone’s day and share your goodies!

Some of these may work better than others depending on if your brownies are more overdone or underdone. But you can’t go wrong with any of these delicious options!

What would you do with a bunch of leftover brownies? I’d love to hear your suggestions! Share them in the comments below!
