The Best Soft Caramel Popcorn

I’m to the point in my life where I realize how cool my dad was growing up, even though I would have never dreamed of admitting it then. He listened to classic rock constantly and me and all my siblings absolutely hated it. I never would have dreamed that someday, about 15 years later, I would be jamming to Led Zeppelin and The Doors on Saturday mornings when I’m working in the garage, getting projects done, just like my old man! I’m the parent who is now trying to convince my kids that these are the classics that will be great forever. I don’t have them convinced either. Someday perhaps the classic rock will live on when they get older like it did for me! 


My dad was just a guy who appreciated the classics. He watched a ton of black and white movies and shows and that was certainly another thing I would grumble about as a teenager. But now I will admit that movies were another place my dad was right. On almost every Sunday the kids would get out a couple of big blankets and lay them out on the living room floor while my dad chose a movie, usually an Alfred Hitchcock movie, and my mom would be in the kitchen popping up big bowls of popcorn for us to share. Her specialty was soft, caramel popcorn. We’d beg and beg her to make it every week and most of the time she would say no, but every once in a great while she would say yes and we knew we were in for an extra great movie night.  


Now that I’m older, I think those classic thriller Hitchcock movies are pretty cool and you wanna know what else is cool? Having a nice bowl of soft, caramel popcorn to go with a cool movie, whether new or old. I’m way behind on all these superhero movies that have come out the last few years, so I think sneaking in a batch of this delicious caramel popcorn every now and again is going to make that an even more fun movie marathon. You’ll have to try my mom’s recipe for perfect caramel popcorn and see if it sparks up a new family tradition for you!

Soft Caramel Popcorn

Serving size: 4
Ingredients:
2 batches of air popped popcorn (equivalent to 1 cup unpopped kernels)
1 stick of butter
1 cup sugar (can be a mixture of white or brown, just enough to equal 1 cup)
1 cup karo syrup
1 teaspoon baking soda
dash of milk (maybe a couple tablespoons)

Directions:
Melt butter in a large saucepan, add sugar and Karo syrup. Stirring constantly, bring to a full boil. Add baking soda and milk.** Bring it back to a boil. Immediately remove from heat and add to the popcorn. I always have my popcorn split in half. I quickly then add the other half, pour the remaining caramel and mix quickly.

*The milk is there to make the caramel creamy and soft. Without the milk, the caramel can get hard and become more like crunchy popcorn balls. By adding a tablespoon or two, the caramel with stay nice and soft.
