2 Pies Certain to Please On Pi Day!

Next week we get to celebrate one of the best food holidays ever- Pi Day!! I mean, sure there’s the math side to things, but really- no matter your opinion on math, I think pie is something we can all get excited about! The funny thing about Pi Day is that it is in March… which is probably the craziest month when it comes to weather. Here in Utah, it can literally be 70 degrees and roasting outsides and then be blizzarding the next day (or sometimes in the same day!). So you can sometimes get away with a light, springy, fresh pie, or a heavy, warm, comfort-food cozy pie!

Well, I have two spectacular options here for you. Who wants to buy a pie when you can make these delicious homemade ones instead? Both of these pies are extremely rich, so a little is going to go a long way! You can decide which one to make depending on what the weather is doing where you live ;)

If the weather outside is frightful- and chilly and overcast and cold and depressing, you definitely need some comfort food, and this German Apple Pie is THE BEST. I am not usually a fan of fruit pies, but with this pie I will absolutely make an exception.

The other great thing about this pie recipe, is that it is pretty easy. Just a lot of apple slicing ;).

Now if you’re lucky enough to be enjoying a sunny, bright spring day, then you’ll want a pie to match, and this lemon cream pie is heavenly- and beautiful! The perfect way to usher in the bright spring weather.

One little tip- you really have to be careful with the clear filling. You have to hit the sweet spot. If you under cook it, obviously it won’t be thick enough to sit on top of the pie- but you’ll have the same problem if you over cook it. And then you’ll just end up with a runny, lemony mess. But don’t worry- even if you end up with an ugly pie, it will still taste divine ;). I could eat that cream filling by the spoonful and not even need the rest of the pie!
