Slow Cooker Pinto Beans

Pinto beans. Dirt cheap. Simple comfort food made in the slow cooker.

Dovetailing tip: Make extra pinot beans in the crockpot. These make excellent refried beans. You will need 2 cups of beans to use in the Meal 4 Bean Burritos. Save money. Save time.

Ingredients:

1 pound dry pinto bean, sorted and rinsed
6 cups beef or chicken broth
1/2 pound bacon chopped, then cooked
1 to 2 tablespoon reserved bacon drippings
1 bay leaf (only if vegetarian)
1 1/2 teaspoons sea salt (add more if desired)
pepper to taste

Directions:

In a pot or bowl, add warm water covering the sorted and rinsed beans by two inches. Let soak overnight.

The next day, drain and rinse the beans, and add to a crockpot.

Add 6 cups broth as well as bacon and bacon drippings. Add the bay leaf.

Cook on low for 7-9 hours or on high for 4-5 hours.

After beans are tender, add salt and pepper to taste.
