Taco Soup in the Rice Cooker

Serves: 4

This was so easy in the rice cooker, and one pot cleanup. It can also be prepared in a crock pot or stovetop if desired.

Ingredients:

1/2 medium onion
1 clove garlic
1 tablespoon olive oil
3 chicken breasts
5 cups chicken broth, low-sodium
1 cup chopped carrot
1 (14.5-ounce) can organic diced tomato, canned
1/2 cup organic brown rice, raw
1 cup corn, canned
1/2 cup organic black beans, canned

Directions:

1 Chop an onion and garlic, and put it at the bottom of a HOT rice cooker with some oil to get it to start browning.

2 While the rice cooker is heating up the onions and garlic, chop your chicken.

3 Then, add chopped chicken to rice cooker and cook till browned.

4 Then add chicken broth, chopped carrots, diced tomatoes, brown rice, corn, and black beans.

5 Turn rice cooker on to "brown rice" setting, if yours has that one.  Or turn it on for at least 45 min-1 hour.
