California Nut Pie

Hi Desi,

I recently purchased another cookbook, "Cook'n with Agave", anyway I ran across a recipe "Calif. Nut Pie", with the ingredients stating 1 1/2 cups chopped nuts. What nuts are they pretaining to?

The recipe resembles a pecan pie actually, but wouldn't it be better to list it as pecan? or whatever? Anyway, that's my question, what is a California Nut, besides my brother?

Ray

Hi Ray,

Since California is home to many types of nuts (mostly people), the original recipe just specified "nuts" (people excepted). California grows walnuts, almonds, pecans, pistachios, macadamia, black walnuts, and so forth. You can use any type or a mix of nuts in this recipe, though I think I'd steer away from pistachios... unless you reduce the salt in the recipe.

Happy Cook'n,

Desiri Wightman, R.D.
