Maple Oat Chewies

Makes 60 servings
Serving Size: 1 cookie

  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup margarine or butter, softened
  • 1 tablespoon molasses
  • 2 teaspoons imitation maple flavoring
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 2 cups crispy rice cereal
Heat oven to 350°F. Grease cookie sheets. In large bowl, beat sugar, brown sugar and margarine until light and fluffy. Add molasses, maple extract and eggs; blend well. Add flour, baking powder, cinnamon and salt; beat at medium speed until well blended. Stir in rolled oats and cereal. Drop by heaping teaspoonfuls 2 inches apart onto greased cookie sheets.

Bake at 350°F. for 8 to 12 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheets.

TIP: One cup butterscotch chips can be added with rolled oats and cereal, if desired.
