You Should Definitely Make These Creamy Coconut Milk Popsicles This Summer!

Even as an adult, I’m just not sure it gets much better on a hot summer day than eating a delicious popsicle. Ever since trying creamy “helado” popsicles, I almost feel that it would be hard to go back to non-creamy, regular popsicles. It’s like eating ice cream on a stick! Who wouldn’t pick ice cream over a boring snow cone?


I finally got ready for summer and to make all the yummy popsicles all summer long and got myself a silicone popsicle mold and am on a mission to be prepared for summer and all those long, glorious hot days with the kids and “meal prep” and get the freezer full of all sorts of flavors of popsicles.

This recipe I am sharing today is a delicious creamy popsicle recipe that is actually low-carb and keto-friendly, but feel free to substitute the erythritol with regular sugar (in the same amount) if you want a regular popsicle and aren’t worried about low-carb. It is so decadent because it calls for coconut milk and cream cheese and contains mixed frozen berries--it calls for strawberries, blueberries and blackberries, but you can totally use whichever berries you prefer. And you can use fresh or frozen berries.


It also has chia seeds and dried coconut flakes, so there is plenty of texture going on--they are so heavenly! If you prefer a smoother popsicle, feel free to run them through a blender until smooth. They honestly take like berry cheesecake on a stick and hit that perfect sweet tooth spot for cold and sweet, especially if you are on a keto or low-carb diet.

You can store them in the freezer for up to one month, but I’d be so surprised if they last that long! :) You can use any popsicle mold, or if you don’t have one, feel free to use small paper cups and wooden sticks. There is simply no reason not to make these!

For the best results when mixing this recipe up, make sure to leave the cream cheese out and get it to room temperature before mixing. Cold cream cheese is hard to mix with other ingredients and will leave you with lots of chunks of it in the popsicles.

Low-Carb, Keto Popsicles

Low-Carb, Keto Popsicles Recipe - creamy, fruity frozen treats, perfect for a hot summer day. These fat bombs on a stick make a great snack to satisfy your sweet cravings and the best part is that they are sugar-free.

Prep time:
Serving size: 6
Calories per serving: 130

Ingredients:
5 ounces cream cheese
1/4 cup full-fat coconut milk
3 tablespoons yogurt
1/4 cup powdered erythritol
2 tablespoons shredded coconut
1 teaspoon chia seeds
1/4 cup frozen strawberries
1/4 cup frozen blueberries
1/4 cup frozen blackberries
1/2 teaspoon mct oils


Directions:
Combine all ingredients, besides the berries in a food processor (blender) and blend until smooth. Add the berries and pulse a few times, until they are broken into small pieces.

If you'd like popsicles with smooth texture, add everything at the same time to the food processor and blend until smooth.

Pour into popsicle molds. Insert popsicle sticks. Freeze for at lest 2 hour or overnight, until set.

Dip the molds in hot water for 15-30 seconds, then take the popsicles out. Keep in the freezer for up to one month.
