Lemon Rice

Serves: 4

Lemon rice goes with Greek food, in my opinion. Or at any time. Such a light and tasty recipe.

Dovetailing tip: Use 2 cups of cooked rice. Saute the onion, Add the cooked rice and with the rest of the ingredients except lemon pepper. Heat, then sprinkle with lemon pepper to serve.

Ingredients:

2 tablespoons butter
1/2 medium onion, chopped
1 cup water
1 cup chicken broth
2 tablespoons lemon juice, freshly squeezed
1 cup uncooked rice, long grain
1/4 teaspoon dried basil
1/8 1/4 teaspoon lemon zest
1 1/4 teaspoons lemon pepper seasonings

Directions:

Melt butter in saucepan. Add the chopped onions and saute until translucent.

Add remaining ingredients EXCEPT lemon pepper to saucepan.

Bring to a boil, then reduce heat.

Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.

Sprinkle with lemon pepper before serving.
