_ eggs
_ teaspoons sugar
___ teaspoon salt
___ cup flour
Butter or margarine
At least 1 hour or up to 4 months before using:
In a blender container, place milk, eggs, sugar and salt; cover. Blend at low speed until well mixed. With motor running, gradually add flour and blend until mixture is smooth, stopping motor and scraping sides of container occasionally.
Heat an 8-inch non-stick skillet or crepe pan over medium-high heat, then coat with butter or margarine, using a paper towel. Pour 2 tablespoons of the batter into skillet or pan and quickly tilt skillet in all directions to spread evenly. Cook until bottom is lightly browned and edges lift easily from skillet; turn crepe. Cook on second side for 30 seconds or until lightly browned. Place on a plate. Coat pan with additional butter or margarine and continue cooking until all batter is used. Let crepes cool. Fill and use immediately or wrap and freeze (see below).
