A unique way to serve low-calorie cauliflower when there is an abundance of it in your garden or in the grocery store. This is such a light main dish that I'd suggest a spciy muffin from the BREADS section, a substantial salad from the SALADS, and something hearty such as Tofu Cheesecake from the DESSERT section. Try this recipe with all your favorite vegetables. You can even add small amounts of leftovers such as cooked brown rice, grated cheese, or couscous or other cooked cereals.
1 1/2 pounds fresh (or two 10-oz pkg. or frozen) cauliflower
1/4 teaspoon butter-flavored granules
1/2 teaspoon parsley flakes or 1 Tbsp. fresh parsley, chopped
1 cup (8 oz.) 1% low-fat cottage cheese
1. Cook, drain and mash cauliflower. Combine with rest of ingredients.
2. Spoon into baking dish, coated with nonstick vegetable cooking spray. Bake at 350 degrees for 30 minutes.
