Double the Pimento Cheese recipe for today’s dip. Save half to make Grilled Cheese Sandwiches for Meal 4.

I served the Pimento Cheese as a vegetable side instead of an appetizer, with sides of fresh cut vegetables: zucchini and carrot sticks, celery ribs, and bell pepper.

When making the Watermelon with Mint & Lime, buy a larger watermelon or half this recipe if you don't need to serve 6-8 people. With the leftover watermelon (you will need 5 cups cubed) make the Watermelon Ice today (Meal 3) so it has time to freeze and serve next day.

Add an additional pound of chicken to the marinade, and grill. Save the leftovers to chop and add to the Meal 5 Summer Fruit Chopped Salad.

You have already prepared the Watermelon Ice. Serve it as a cool, light dessert for today’s meal.
