10 Things to Try With Leftover Pancakes

Leftover pancakes. I didn't even know such a thing existed. Ok so maybe that's not entirely true, but it's definitely a very rare occasion to have leftover anything at my house, let alone pancakes. My hubby and kids help see to that;). However- on the rare occasion, it does so happen that we have leftovers (Hallelujah! This mama is a huge fan of leftovers;) ).

So what do you do when you have a bunch of leftover pancakes? You could just eat them… or you could be creative and try one of these sweet ideas;).

Sweet sandwiches. Try a variety of toppings between two pancakes for some seriously tasty sandwiches. You could go with sweet, such as Nutella and strawberries or peanut butter and jelly, or you could be a little more adventurous and try a Monte Cristo style sandwich. Or stick with straight grilled cheese:).

"Faux-nuts" :). Cut a circle out of the middle and use your favorite frosting recipe to frost your makeshift donuts. Okay, so they may not taste exactly like a donut- but they're covered in frosting. What more does one need in life? ;)

A literal cake. While we're on the topic of frosting- why not frost several layers and have a delicious pan-CAKE? Again- FROSTING. ;)

Pancake shake. There's all kinds of shakes out there- why not make a pancake shake? You could even throw in a little maple syrup (or homemade buttermilk syrup!!) for an extra sweet treat;).

Pancake bread pudding. Put a crumbled pancake in a bowl and put in a little vanilla almond milk for a delicious twist on bread pudding! Again, experiment with putting in syrups, or even try various fruits for an awesome dessert!

Homemade McGriddles. My husband loves the McGriddles from McDonalds. You could totally make your own at home using leftover pancakes! Soak them in maple syrup and place sausage, eggs, and cheese between two of them. So unhealthy and so delicious.

French toast pancakes. I think I have seen French toast made out of every kind of bread imaginable, so why not pancakes?? I usually throw some frozen blueberries in our pancake mix, and I think they would transfer very well as French toast!

Pancake trifle. Layer chopped pancakes with fruit and custard to create a unique trifle:). You could try a few different versions of this one too!

Freeze them. Okay- so this idea isn't anything special, but sometimes it's so nice to have hot breakfast without spending all the time making it! Freezing pancakes is a great way to get a tasty hot breakfast on the table within minutes.

Eat them. These seems like a silly suggestion, but if you're anything like me, sometimes you have the greatest intentions with food items and then life happens and before you know it, something perfectly good has gone to waste because I meant to use it for something specific and never got to it. If you're getting to the point where you're not sure if you'll actually be able to use the leftover pancakes the way you intended, just eat them! Never throw food out;). You can always make more pancakes, or just wait for the next time you have leftovers;).

Some of these ideas will work better than others depending on your leftover pancakes (are they sweet, sourdough, do they have fruit, etc). What do you do with your extra pancakes? :) Share your ideas in the comments below!
