Super Easy Peanut Butter Ice Cream Cups

I have been on such an ice cream kick lately, homemade and store-bought both, and I saw this great little idea for a wonderful, EASY treat that is perfect for summertime. Think of the magical goodness of a Reese’s peanut butter cup PLUS ice cream = nothing short of amazing!


You start with just 2 simple ingredients:

· Your favorite peanut butter ice cream

· Chocolate chips


Place paper cupcake liners into a cupcake baking tin. Pour a thin layer of melted chocolate into the liners and freeze. Once frozen, add a layer of Dreyer's Peanut Butter Pie Frozen Custard and place the tin back into the freezer.


After 15 minutes, add another layer of melted chocolate to the top before freezing one last time. They are so easy and delicious!

And my favorite part is that you can do this with any ice cream combo you can think of. The other suggestion they give is with mint chocolate chip ice cream instead of the peanut butter. And for the bottom layer, use crushed Oreo cookies for a bit of a change.


Ok and I have to end off with a mini rant about how much I miss my Whitey’s mint chocolate chip ice cream now that I’m out West. It’s one of those things where I enjoyed it so much while I had it in the Midwest, but it’s kind of ruined me forever now because nothing else measures up. I have literally tried probably seven kinds over the course of the last couple months because my husband and I have been trying to find a replacement for our favorite treat, and nothing has been nearly as good. That is until we discovered Tillamook’s mint chocolate chip last week. We were over at some friends where they offered this for dessert and it was almost as good. Not quite, but almost. Thankfully! But now I have a few words I would like to say to a treasured friend I miss dearly.


Dear Whitey’s Mint Chocolate Chip Ice Cream,

I know you haven’t seen me in a while and I’m sorry! Trust me, I haven’t forgotten about you. Far from it in fact. I haven’t forgotten about your not one, but two perfect kinds of chocolate chips; the nice, melty ones and the harder, mini chips. Don’t worry they are often floating around happily in my dreams. I haven’t forgotten about your indescribably perfect, refreshing mint flavor. I’m sorry, I don’t live in the Midwest anymore so a girl’s gotta {try to} move on. I hope you can understand. But just between you and me, all other mint chocolate chip ice creams just don’t do it for me anymore. So thanks a lot! I have found a pretty decent alternative but it will always be you in my heart. Yes, I realize I could have you shipped to me…but for quite a hefty price. I’m sorry but I just can’t fork out $41 for you. It’s just a little steep for my ice cream budget. I did buy a Whitey’s t-shirt and ice cream scooper instead so you’ll never be forgotten, I promise! Ok I love you! Miss you!!! You’re the BEST!! Buh-bye!!
