Grilled Pepper & Onions for Fajitas


Serves: 4

I like to add 1/4-1/2 cup of the Aqua Negra Marinade that I made for my fajitas to the veggies along with the oil.

Ingredients:

2 red, yellow & green bell peppers, cored, seeded and cut into 1/4" strips
2 onions, peeled and cut lengthwise into 1/4" strips
1 tablespoon olive oil

Directions:

You'll Need: Shaker or grill basket
Directions:
1. Preheat grill on MEDIUM.
2. Place shaker basket on grill; preheat 5 min.
3. Toss peppers, onions, and oil in medium bowl.
4. Add vegetables to shaker basket. Grill, turning occasionally,10 min, or until tender. Transfer to bowl; cover to keep warm.
OPTION:
In large heavy-duty skillet, heat oil (and Aqua Negra Marinade, if using). Add peppers and onions and cook about 10 minutes, or until crisp tender.
