Creamy Pumpkin Pasta

Serves: 4

Substitute Gluten Free Penne pasta, if desired. Kids love this easy to fix meal.

Ingredients:

8 ounces dry penne pasta, uncooked
1 cup canned solid-pack pumpkin
1/2 cup milk
4 ounces cream cheese, cut into small cubes
1 garlic clove, minced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 egg
1/4 cup freshly grated Parmesan cheese, divided

Directions:

Cook pasta according to package directions.

Meanwhile, combine pumpkin, milk, cream cheese, garlic, salt, and pepper in medium saucepan. Cook on medium/low heat, stirring until cheese is melted. Crack egg in small bowl and gently mix. While whisking the pumpkin mix, slowly drizzle a few spoonfuls of the hot pumpkin mix into the egg (this keeps the egg from cooking). Whisk the pumpkin mixture while pouring in the egg mixture. Stir in 2 tablespoon Parmesan cheese. Heat over low heat until cheese is melted and sauce is hot.

Serve the pumpkin sauce over the top of the pasta. Sprinkle remaining Parmesan cheese over top.
