Quinoa & Arugula Salad


This is equally good using Romaine lettuce or another favorite green.

Ingredients:

2 cups precooked quinoa
4 cups arugula
1/3 cup sun dried tomato, chopped
1/3 cup crumbled feta cheese
3 ounces lemon vinaigrette

Directions:

Mix all ingredients together and serve.
