Green Beans with Garlic, Prosciutto and Olives
An exceptional twist on green beans.

|1/2 ounce||prosciutto or bacon, finely chopped|
|2 cloves||garlic, minced|
|1 tablespoon||olive oil|
|1 pound||green beans, ends trimmed|
|1 1/2 tsps||fresh rosemary, chopped|
|3/4||ripe pitted olives, cut in half longways|
|freshly ground black pepper, to taste|
|sea salt, to taste|
Add prosciutto and garlic to hot oil in frying pan. Cook, stirring, just until prosciutto is crisp, (do not scorch), about 2 minutes. Quickly remove prosciutto and garlic from pan with slotted spoon and set aside. Add beans, 1/3 cup of water, and rosemary to pan. Cover and cook until beans are just tender to bite, about 5 minutes. Gently mix in olives. Cook, uncovered, stirring occasionally, until most of the liquid has evaporated, 3 to 4 minutes. Transfer bean mixture to a serving bowl and sprinkle with prosciutto and garlic. Garnish with pepper to add to taste.
