Winter's Hard on a Body, So Let's Eat Cake!

Winters in Spokane, Washington were long and hard. But Aunt Annie knew how to brighten them up. Every once in awhile during the winter, she would give us a call: "Hey kidlets, winter's hard on a body, so come on over for dinner, and let's eat cake!"

A typical winter menu at Aunt Annie's was a big pot of hearty stew or soup with her feathery-light homemade rolls, and then we'd top the meal off with cake. Cake and ice cream, cake and whipped cream, or maybe just cake and more cake.

One of our favorite cakes, and this was one of her favorite recipes too, was her Canned Fruit Dump Cake. There was a reason for pushing this cake, besides it being so yummy. Canning season was approaching and that meant any current bottled fruit on the shelves needed eating. This recipe was a perfect way to use up bottled fruit.


Well, it's been a long and hard winter in our neck of the woods this year so I think we'll have cake tonight. A big pot of stew (using all those lingering veggies in the fridge), some piping hot homemade rolls, and Canned Fruit Dump Cake for dessert.

PEACH (or Any Canned Fruit) Dump Cake


This delicious cake is fast, easy, and a family favorite!

Ingredients:
1 (29-ounce) can peaches in syrup, undrained; any canned fruit will work
1 18.25 ounce yellow or white cake mix
3/4 cup butter sliced into pats; more to grease baking dish


Directions:

Preheat oven to 350°F. Butter a 9x13-inch baking dish. Pour peaches and syrup into the prepared baking dish. Spread dry cake mix evenly over peaches. Arrange butter pats in even rows on the cake mix. Bake in the preheated oven until top of cake is golden brown, 35 to 40 minutes.
NOTE: If you don't have a packaged cake mix around, you can make cake batter from scratch. If you go this route, then drain the syrup off the fruit and omit the butter pats. Place the fruit pieces in the buttered baking dish, pour the batter evenly over the fruit, and bake as usual. It's delicious any way you do it!
