Crunchy Chicken Salad

Serves 4

Ingredients:

1 pound boneless, skinless chicken breast, chopped
2 tablespoons oil
1 (12-ounce) package finely chopped coleslaw mix
2 carrots, grated
2 to 3 green onions, chopped
fresh cilantro to taste, chopped
1/4 cup sunflower seed
1/4 cup , toasted, sliced almonds
2 packages chicken-flavored ramen noodles with seasoning packets

Dressing:
2 tablespoons sugar
1 teaspoon pepper
3/4 to 1 cup oil
7 tablespoons rice vinegar
2 packets ramen noodle seasoning

Sauté chicken in oil until golden or until juices run clear when pierced with a fork drain and cool. Combine with next 6 ingredients in a large serving bowl set aside. Crumble ramen noodles, reserving seasoning packets for dressing mix into salad. Pour dressing on top just before serving toss gently.

Dressing: Whisk ingredients together.

TIP: Mix up the ingredients for this quick & easy salad in a plastic zipping bag and it'll be done in half the time. Just blend by shaking and spoon out individual servings.
