Tuscan Chicken Simmer
This Tuscan Chicken Simmer is easy, fast and delicious. I like to make the basil pesto sauce instead of using Classico brand. See the recipe included in this menu plan.Yield: 4 servings
|4||small boneless skinless chicken breasts (1 lb.)|
|1/4 cup||classico traditional basil pesto sauce and spread (or homemade)|
|4 ounces||(1/2 of 8-oz. pkg.) philadelphia cream cheese, cubed|
|2 cups||grape tomatoes|
|1/2 cup||shredded mozzarella cheese|
|1/4 cup||shredded Parmesan cheese|
|1/4 cup||shredded provolone cheese|
Cook chicken in large nonstick skillet on medium heat 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
If making homemade Basil Pesto Sauce, prepare it first, then add it (or the jarred sauce) with the next 3 ingredients to skillet. Cook, uncovered, on medium heat 2 min. or until heated through, stirring occasionally.
Return chicken to skillet; spoon sauce over chicken. Cook 1 min. or until chicken is heated through. Toss cheeses together. Sprinkle with shredded cheese.
