Paleo Coconut Macaroon No Bake Cookies


The other day I was staring at my cupboard again, desperate for a treat. I was getting tired of my choices-hot cocoa, or hot cocoa. I am on a super funky diet these days, that includes no refined sugar and no eggs...which means no baking. :0( While I was staring at my cupboard, my super sweet hubby came in and took a little bit a this and a little bit of that, and poof! made me a delicious no bake cookie I could eat! Even if you aren't on a health kick like me, these cookies are a delicious version of coconut macaroons, but with chocolate mixed in. Much better than drizzling chocolate on top!! Hope you enjoy and feel free to eat the whole batch at once, as they are suuuuper good for you!!!

Ingredients:
Sauce:
2-3 tablespoons Coconut Oil
2 tablespoons cocoa butter
2 tablespoons (heaping) baking cocoa
1/2 cup honey
2-3 tablespoons coconut milk (make sure to use the top of the can milk that doesn't have the water mixed in)

Cookies:
3/4 cup finely chopped dry, non-sugared flaked coconut
1/2 cup chopped roasted pecan


Directions:
For Sauce:
Bring to a low boil, simmer for 5 minutes.

For Cookie:
To sauce, add coconut and and pecans. Stir well. Drop by spoonfuls onto cookie sheet covered in wax paper. Cool in fridge about 30 minutes until set. Enjoy!


Note:
If your sauce is too runny (it doesn't coat your spoon) simply add another teaspoon or so of cocoa to thicken it up.
